My Spring Cleanse Zesty Lemon Curd

Are you looking for new & nutritious ideas for your brekkie or snacks? Try one of my Spring Cleanse favourites, refreshing Zesty Lemon Curd. Yes, it’s gluten free, grain free and sugar free…nope, not even any natural sweeteners in this one!

 

Zesty Lemon Curd

Serves 2

What you’ll need:

1/2 tablespoon lemon rind

4 eggs

1/2 cup lemon juice

1/3 cup coconut oil

1/2 teaspoon vanilla paste

1 tbsp ghee, butter or cacao butter

 

What you’ll need to do:

Whisk eggs and lemon zest in a small saucepan, for 1 minute over low heat.

Add in lemon juice, coconut oil, vanilla & butter/ghee/ cacao butter. Whisk continuously over medium heat, until mixture thickens. And you’re done!

Option to serve warm or chilled with coconut yoghurt and nut butter, or nuts and seeds of choice.

Enjoy for your first meal of the day, or a smaller portion as a nutritious snack.
