Green herbs like parsley, basil and coriander are full of antioxidants and nutrients such as Vitamin A, C, K, B Vitamins, Magnesium, Calcium, Potassium, Iron and also have powerful detoxification properties.
What a perfect way to enjoy your Christmas roast left overs and support your health, with my Summer Detox Pesto. It is adaptable to what herbs and nuts you have on hand and the garlic content can be adjusted depending on your taste buds.
Summer Detox Pesto
What you will need:
4 tablespoons cold pressed, extra virgin olive oil
50g (2oz) pine nuts (I’ve also made this with cashews and almonds)
1⁄2 cup (2 oz) basil leaves
1⁄4 (1⁄2 oz) parsley (if you’re a coriander fan, you could use this in place of parsley)
1-2 garlic cloves, chopped
Juice 1⁄2 lemon
1⁄4 tsp Himalayan salt
Pepper, to taste
What you will need to do:
Make the pesto by placing all the ingredients in a food processor and whizzing until smooth and well combined.
Add to your favourite meat, hot veggie or cold salad dish for an addition of flavour and to support your Summer cleansing.
