Baked Sweet Potato With Lentils & Smashed Avo

I just love heading to health events, as last week I had the pleasure of meeting the glowing author of Healthy Indulgence, Malissa Fedele. As we got chatting we realised we’d both recently published books and even used the same local printer 🙂

After looking through Malissa’s recipe book, I couldn’t go past this baked sweet potato recipe. Today, you’re in for a treat as Malissa was kind enough to share it with you all!

Baked Sweet Potato with lentils and Smashed Avo

What you’ll need:

3 Sweet Potato – Washed and wrapped in foil

Filling:

1 Tablespoon Olive Oil

2 Ripe tomatoes

1 Clove Garlic, crushed

1 x Can Organic Lentils, rinsed*

1 Tablespoon chopped parsley

Salt & Pepper

Topping:

1 Avocado

½ Lemon Juiced

Salt & Pepper

Dressing:

¼ cup Coconut Yoghurt

1 Tablespoon Tahini

1 Teaspoon Rice Malt Syrup

Salt & Pepper

Optional toppings:

Chopped Coriander, Spring onion & chili flakes

What You’ll Need To Do:

Step 1. Preheat oven to 180 degrees Celsius and bake sweet potatoes for 45-50mins until soft

Step 2. Meanwhile, to make the lentil filling simply heat a small fry pan gently with olive oil and add all ingredients. Cook until tomato has broken down completely. This should take around 20 minutes.

Step 3. Add all the dressing ingredients into a bowl and whisk. Adjust seasoning to suit taste.

Step 4. Unwrap sweet potatoes and slice down the middle spooning out just a little bit of the center to make space for the filling. Spoon in the lentil filling; add a dollop of smashed avo and drizzle with dressing. Add desired toppings

*If you’re not vegan, these could be substituted with cooked and chopped fish (wild caught), meat (hormone free, grass fed & if possible organic) or chicken (free range and if possible, organic).
